CONTAINMENT: the wine is stored in stainless steel tanks.
FERMENTATION: fermentation occurs at 30º C using native yeasts and we pump over daily to break the cap formed.
COLD SOAK: this is performed 30 days after being put in the tanks. A long maceration process occurs to extract maximum colour and tannins ensuring a long life wine.
PRESSING: this is done with a pneumatic press.
MALOLACTIC FERMENTATION: this takes place after the alcolholic fermentation in stainless steel tank so when passed into barrels the wine has already undergone this process.
EXTRACTION FROM BARRELS: after 12 months in barrels, clarification is performed using egg whites.
