VINEYARDS:

-85 % of 37 year old vines of tempranillo grape variety.
-10 % of 24 year old Mazuelo vines.
-5% of 24 year old Graciano vines.

CONTAINMENT
: the wine is stored in stainless steel tanks.

FERMENTATION
: fermentation occurs at 30º C using native yeasts and we pump over daily to break the cap formed.

COLD SOAK
: this is performed 30 days after being put in the tanks. A long maceration process occurs to extract maximum colour and tannins ensuring a long life wine.

PRESSING
: this is done with a pneumatic press.

MALOLACTIC FERMENTATION
: this takes place after the alcolholic fermentation in stainless steel tank so when passed into barrels the wine has already undergone this process.

EXTRACTION FROM BARRELS
: after 12 months in barrels, clarification is performed using egg whites.

FUTURE
: with a long life, we predict a positive evolution over a 10 year period.

RESULTS
: this is a wine made with love, hard work entwining science and art to charm the most exquisite of palates.
